These, along with my peanut butter protein granola bars and no-bake brownie protein balls, are always on our homemade snack rotation. Perfect for after school, throwing in lunches, or grabbing as a snack on the go!

About These Peanut Butter Crispy Snack Bites
I first started making this recipe a while ago, which was inspired by The Real Food Dieticians. But of course, I put my own twist on it and created a version that gives you an extra boost of nutrients. What's different about these, you may be wondering? Well, these are...

My mom tested one when she was over and said, "I like these better than your healthier scotcheroo bars." Well, I don't agree with her on that one (sorry, mom), but I do agree they are a pretty tasty snack!

I'm a huge fan of adding "super seeds," like the flaxseeds in this recipe and in my carrot flax muffins, chia seeds in my dairy-free chia bowl and hemp seeds in this banana and peach smoothie. Ingredients & Substitutions

- Natural peanut butter - Use natural, drippy peanut butter (the only ingredients should be peanuts and maybe salt). Costco is my absolute favorite, but if you don't have Costco, Santa Cruz and Once Again are great options.
- Honey - I always recommend raw honey to ensure you are getting the most out of the nutritional benefits of honey. That said, any honey can be used.
- Brown rice crisps - I have tested this recipe using both One Degree and Nature's Path brown rice crisps, and both turn out great. I would imagine any brand will work.
- Chocolate chips - For a fully refined sugar-free snack, use Hu Chocolate. For dairy-free, ensure the chocolate chips are dairy-free.

🤍 Sara's clean food tips: I recommend organic peanut butter and raw honey. Also, look for chocolate chips that contain just sugar, chocolate, and cocoa butter.
Step-by-Step Directions

- Step 1: Combine the peanut butter, honey and salt in a large mixing bowl.

- Step 2: Add the brown rice crisps and flaxseeds. Mix to fully combine.

- Step 3: Fill each muffin cup almost to the top with the crispy peanut butter mixture.

- Step 4: Using the back of a spoon, press the mixture down into each muffin cup, leaving just a little space at the top for the chocolate.

- Step 5: Melt the chocolate chips with the peanut butter and evenly spread over each cup.

- Step 6: Place in fridge to allow chocolate to set. Once set, pop each bite from the muffin pan and store in the fridge.
Equipment Needed
You will need a silicone 24-cup muffin pan for this recipe. This way, you can easily pop out each crispy peanut butter bite. You can also use it for my gluten-free mini chocolate chip muffins or make mini muffins with my chocolate chip banana protein muffins.
Sara's tips & Notes
- If you have extra mixture, roll into balls for a few peanut butter crispy balls.
- If you don't have a silicone mini muffin pan, you can use this recipe and make balls out of the mix. Each ball can then be drizzled with chocolate if you'd like.
- You can swap the ground flaxseeds out for hemp seeds. Hemp seeds do have a slight nutty flavor, so I prefer flaxseeds, but both are great options. You can also use hemp seeds in my raspberry overnight oats.
- Sprinkle the top with some coarse sea salt for a salty sweet treat.

Recipe FAQs
Over time, honey may begin to crystallize due to the high amount of sugar, but don't worry, it's completely safe to eat (it can even be a sign of high-quality honey). To bring to a liquid state, place the jar/bottle in a glass of warm water until you can pour and measure it.
Yes, almond butter should work well, just ensure it's drippy and smooth. For nut-free, you can use sunflower seed butter, but it will alter the taste slightly.
Since I'm using brown rice crisps, they should be! But to ensure these are gluten-free, make sure your crisp cereal is certified gluten-free. All other ingredients are naturally gluten-free.
To make dairy-free, use dairy-free chocolate chips. All other ingredients are naturally dairy free.

How to Store
Storing: These peanut butter crispy bites should be stored in an airtight container in the fridge and will stay fresh for up to one week.
Freezing: These also freeze great and are delicious straight out of the freezer. They are a little harder to bite into when frozen, so be careful with small kids. My healthy Samoa cookies are also great straight from the freezer (they take a little more time to make, but totally worth it).
Note: If you are taking these along as a snack, it's best to keep them cold, as they do soften when sitting at room temperature.

- 1 24-cup silicone muffin pan
- 1 large mixing bowl
Ingredients
- 1 cup drippy, natural peanut butter
- ¼ cup raw honey
- ¼ tsp. fine sea salt
- 1 ½ cups brown rice crisps
- ½ cup ground flaxseeds
Chocolate Topping
- ½ cup chocolate chips
- 1 tsp. peanut butter
Instructions
- In a large mixing bowl, combine the peanut butter, honey, and salt.1 cup drippy, natural peanut butter, ¼ cup raw honey, ¼ tsp. fine sea salt
- Add the brown rice crisps and ground flaxseeds and mix to fully combine.1 ½ cups brown rice crisps, ½ cup ground flaxseeds
- Scoop the mix into the muffin cups, filling them almost to the top. Use the back of a spoon to pack the mixture into each muffin cup, leaving a small space for the chocolate topping.
- Combine the chocolate chips and peanut butter in a microwave-safe bowl. Heat in 45-second intervals until almost melted. Remove and stir until smooth and all chocolate is fully melted.
- Spread a layer of chocolate evenly over the top of each crispy bite. Transfer to the fridge and allow the chocolate to fully set. This should take about 1 hour.
- Once set, pop each bite from the muffin pan and store in the fridge in an airtight container.
Notes
- If you have leftover mixture, you can make a few "crispy balls" with it.
- Chocolate topping is optional, but highly recommended 🙂
- Store in an airtight container in the fridge for up to 1 week.
