These peanut butter crispy bites are a wholesome snack the whole family will love! Just 5 ingredients, no bake, and ready in 15 minutes with brown rice crisps, flaxseeds and raw honey. Tastes like a dessert, but is actually good for you!
In a large mixing bowl, combine the peanut butter, honey, and salt.
1 cup drippy, natural peanut butter, ¼ cup raw honey, ¼ tsp. fine sea salt
Add the brown rice crisps and ground flaxseeds and mix to fully combine.

Scoop the mix into the muffin cups, filling them almost to the top. Use the back of a spoon to pack the mixture into each muffin cup, leaving a small space for the chocolate topping.
Combine the chocolate chips and peanut butter in a microwave-safe bowl. Heat in 45-second intervals until almost melted. Remove and stir until smooth and all chocolate is fully melted.
Spread a layer of chocolate evenly over the top of each crispy bite. Transfer to the fridge and allow the chocolate to fully set. This should take about 1 hour.
Once set, pop each bite from the muffin pan and store in the fridge in an airtight container.
Notes
If you have leftover mixture, you can make a few "crispy balls" with it.
Chocolate topping is optional, but highly recommended :)
Store in an airtight container in the fridge for up to 1 week.
