Equipment

  • 1 24-cup silicone muffin pan
  • 1 large mixing bowl

Ingredients

  • 1 cup drippy, natural peanut butter
  • ¼ cup raw honey
  • ¼ tsp. fine sea salt
  • 1 ½ cups brown rice crisps
  • ½ cup ground flaxseeds

Chocolate Topping

  • ½ cup chocolate chips
  • 1 tsp. peanut butter

Instructions

  • In a large mixing bowl, combine the peanut butter, honey, and salt.
1 cup drippy, natural peanut butter, ¼ cup raw honey, ¼ tsp. fine sea salt
  • Add the brown rice crisps and ground flaxseeds and mix to fully combine.
1 ½ cups brown rice crisps, ½ cup ground flaxseeds
  • Scoop the mix into the muffin cups, filling them almost to the top. Use the back of a spoon to pack the mixture into each muffin cup, leaving a small space for the chocolate topping.
  • Combine the chocolate chips and peanut butter in a microwave-safe bowl. Heat in 45-second intervals until almost melted. Remove and stir until smooth and all chocolate is fully melted.
  • Spread a layer of chocolate evenly over the top of each crispy bite. Transfer to the fridge and allow the chocolate to fully set. This should take about 1 hour.
  • Once set, pop each bite from the muffin pan and store in the fridge in an airtight container.

Notes

  • If you have leftover mixture, you can make a few "crispy balls" with it.
  • Chocolate topping is optional, but highly recommended :)
  • Store in an airtight container in the fridge for up to 1 week.
