Looking for a potato side dish that isn't boring and will have you coming back time and time again? Then these garlic and rosemary oven roasted potatoes are it! Especially around the holidays. While most people like classic mashed potatoes, they are way overrated in my opinion. I'm all about replacing them with something that actually tastes good.
If you're like me and want more flavorful (and not boring) potato dishes, then you should definitely try these air fryer crispy smashed potatoes (they can also be baked in the oven) and savory mashed sweet potato casserole.

Ingredient Notes

- Baby yellow potatoes - The smaller the potatoes, the better. I like baby yellow potatoes. "Little Yellows" from the The Little Potato Co are a good option, but any baby/small potatoes can be used.
- Rosemary and garlic - I highly recommend fresh for both, but dried can be used. See below for amounts if choosing to use dried.

Clean food tip: If pesticide/herbicide exposure is important to you, opt for organic potatoes if you can find them. Potatoes are known to be on the EWG's dirty dozen list.
Variations
- Add parmesan cheese for cheesy potatoes. Add about ½-2/3 cup finely grated parmigiano-reggiano cheese in with the potatoes during the last 10 minutes of roasting (adding the cheese too soon will cause the cheese to burn).
- Try different herbs and spices. Some chopped fresh thyme and paprika would work well in this recipe. I love paprika on potatoes -you'll find me using it on my sweet potato cubes in the air fryer.
- Use dried garlic and dried rosemary. While I prefer fresh, if needed, you can use 2 tsp. dried rosemary and ¾ tsp. of garlic powder.
Step-by-Step Instructions

Step 1: Wash and dry potatoes and then slice each potato in half.

Step 2: Add sliced potatoes to a medium bowl and toss with oil, chopped rosemary, minced garlic and salt.

Step 3: Transfer potatoes to a baking sheet and place potatoes cut side down. This will help get those nice crispy edges.

Step 4: Bake at 425-degrees F for 35-40 minutes, stirring potatoes halfway through baking time.
Tips for Crispy Potatoes
- Cut the potatoes in even, bit-sized pieces. This helps with even roasting.
- Pre-heat pan in the oven and add potatoes to the hot baking sheet.
- Don't use parchment paper and place potatoes cut side down on the baking sheet.
- Some people think tossing potatoes in a little starch before roasting can help with the crispiness. I've tested with and without starch, and find the difference to be pretty minimal, so I personally don't add starch. But if you'd like to try, you can toss the potatoes with 2 tsp. corn starch or arrowroot starch before roasting.
- If wanting to transfer these to a serving bowl, let potatoes rest on the pan for 5-10 minutes before doing so. If placed in a bowl right away, the steam released from the potatoes will make them soggy. Also, I recommend you use a shallow bowl/plate for serving vs. a deep bowl.
Which Potatoes are Best for Oven Roasted Potatoes?
First and foremost, small potatoes are best to get the perfect balance of crispy edges and soft interiors.
Baby yellow potatoes are ideal - their thin skin crisps up beautifully and their centers stay soft and creamy.
Any variety of a small/baby yellow potatoes will work well in this recipe. You could even mix in baby red potatoes for added color and flavor. Just don't use russet potatoes - those are better suited for a true baked potato.
No matter what type you choose, keep them small so each piece has plenty of skin for extra crispiness.

Recipe FAQs
While not necessary, par-boiling them first will help them to become extra crispy in the oven by getting rid of starch and jumpstarting the roasting time in the oven.
Leave the skin on. Leaving the skin on gives more flavor, crispier edges and more nutrition.
There could be a few reasons, but your potatoes might have not fully dried after washing them (that moisture turns to steam in the oven and prevents them from getting crispy) or perhaps your pan was overcrowded. Make sure the potatoes have plenty of space to "breath" while roasting. And be sure to enjoy them soon after roasting - as they sit they will lose some of the crispiness.
Serving Suggestions
This is such an easy side dish that goes with just about anything, especially around the holidays, Thanksgiving and Christmas. But if you'd like some recommendations, try them with one of the following.
Dinner: You can serve them alongside some easy air fryer turkey burgers or slow-cooker Paleo pulled pork sandwiches.
Breakfast/brunch: Pair them with this sweet potato crust quiche or dairy-free frittata.
Storing and Reheating
Storing: Store leftovers in an airtight container in the fridge for up to 5 days. They can also be frozen in a freezer safe container for up to 2 months.
Reheating: Potatoes will lose their crisp edges when stored. To get some of the crispiness back, warm in a skillet with a drizzle of olive oil, or roast in the oven at 400-degrees F for 10-15 minutes, or until heated through.

Equipment
- 1 Mixing bowl
- 1 Baking sheet
Ingredients
- 2 lbs. baby/small yellow potatoes
- 1 tbsp. extra-virgin olive oil
- ½ tsp. fine sea salt, plus more for topping
- 2 tbsp. chopped fresh rosemary (equivalent to 1-5 oz. pack of fresh rosemary)
- 1 tbsp. hand-minced garlic (2-3 cloves)
Instructions
- Preheat oven to 425-degrees F and place baking sheet in oven while preheating.
- Wash and fully dry potatoes. Slice each potato in half and place in a mixing bowl.
- Add the olive oil, salt, chopped rosemary, and garlic to the potatoes and mix well to ensure all potatoes are coated.
- Remove the baking sheet from the oven and evenly spread potatoes onto the baking sheet. Make sure the majority (if not all) of the potatoes are cut side down (this will help them get extra crisp).
- Return pan to oven and bake for 35-40 minutes, stirring halfway through. If some potatoes are sticking to the pan, use a spatula turned upside down to help loosen them from the pan.
- Once potatoes are nice and brown, remove from oven.
- Sprinkle with additional sea salt, serve, and enjoy.
Notes
- I like adding either fine sea salt or flaky sea salt before serving. You can lightly spray potatoes with oil to help the salt stick.
- You can use parchment paper if you'd like, but skipping the parchment helps them to get extra crispy (if you use parchment, you don't need to preheat the pan).
- Larger potatoes may take longer to cook.
- If wanted to transfer to a serving dish, allow potatoes to cool on pan 5-10 minutes and use a shallow bowl or plate to avoid the steam making them soggy.
