Popsicles... a favorite summer treat! Cool and refreshing. But why make your own? The store bought kind can have boat loads of unneeded added sugars, food-dyes, and preservatives.
While there are some healthier store bought kinds (which I also do buy from time to time), nothing comes close to homemade healthy popsicles, and this strawberry popsicle recipe is a great way to start if you're new to making your own.

Well, there isn't too much to share about the ingredients in this easy popsicle recipe. But, here are a few quick notes.
Strawberries - because strawberries show up time and time again on the EWG's (Environmental Working Group) dirty dozen list I prefer to use organic strawberries.
You can use fresh or frozen strawberries.
Watermelon - creates a great flavor combination with the strawberries. No need to look for organic here. And half a personal size watermelon is the exact amount you'll need for this recipe.
How to Make
Have I mentioned yet that this is an easy popsicle recipe? 🙂
Step 1: Grab your sliced strawberries and sliced, or cubed, watermelon and add to a high-speed blender (or food processor) and blend.
Step 2: Once blended, pour the "juice" into your popsicle molds. If needed (pending which popsicle mold you have) add the popsicle sticks (or add tops to popsicles) and place in the freezer. That's it!
Step 3: Freeze for 3-4 hours, or until popsicles are solid. And then enjoy this strawberry popsicle recipe.
FAQs
I recommend a silicone popsicle mold. They are BPA-free and are easy to use and clean.
These will stay good in the freezer for 2-3 weeks.
Notes & Tips
Strawberries - this strawberry popsicle recipe is great for those strawberries that are reaching their natural expiration date.
Added sweetener - if you choose to do so, you can add a little bit of natural sweetener for an extra sweet treat. I've made them with and without added sweetener. When adding sweetener, I use honey. See recipe notes for full details.
And...adding sweetener does help to reduce the freezing point and will result in more of a standard "popsicle texture" vs. more of a solid "ice pop." But this is totally up to you! And don't worry... if you choose to add sweetener, they will still be relatively healthy popsicles.
Unmolding popsicles - let the popsicles sit at room temperature for 2-3 minutes before taking out of the molds (this just helps them slide out of the molds easier). You can also run under warm water for 30 seconds or so to loosen them from the molds.
Storing - you can keep these stored in your freezer molds, or you can take them all out and place in a freezer safe container - if you need to stack them, use parchment paper between popsicles.

Strawberry Watermelon Popsicles

Ingredients
- 2 cups chopped watermelon
- 2 cups hulled and sliced strawberries
Optional Ingredients (see notes)
- 2 tbsp. raw honey
- 2 tbsp. water
Instructions
- Mix watermelon and strawberries in a blender or food processor until fully blended.
- Pour into popsicle molds and freeze for 3-4 hours, or until frozen.
- Enjoy!
Notes
- If adding honey: Using a small sauce pan, heat the honey and water over low heat. Stir frequently until honey has dissolved and you are left with sugar water. Pour this into the blender with the fruit prior to blending. (I like using raw honey, but regular honey will work. You could try maple syrup or organic sugar, too).
- If adding honey, each popsicle will have roughly 5 grams of added sugar and 46 total calories.
- Unmolding popsicles - let the popsicles sit at room temperature for 2-3 minutes before taking out of the molds (this just helps them slide out of the molds easier). You can also run under warm water for 30 seconds or so to loosen them from the molds.
- You can store these in the molds, or take all popsicles out of molds after frozen and store in a freezer safe container. Use some parchment paper between popsicles if needed.

add 2 tbs cornstarch to fruit and then blend. the cornstarch will help keep the popsicles from becoming too icy and give it a texture similar to store pops such as outshine bars. I do this with many combinations and it really does work.
