Zucchini Muffins

Serves: 12 Cooking Time: 20 minutes

Ingredients

  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 2 eggs
  • 2 tsp. vanilla
  • 1/4 cup homemade applesauce (store bought is just fine too)
  • 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • Pinch of salt
  • 1 1/2¬†cups white whole wheat flour
  • 1/2 cup buckwheat flour
  • 2 tsp. cinnamon
  • 2 cups grated zucchini (excess water removed)

Instructions

Preheat oven to 350

Grease muffin pan with coconut oil, or place cupcake liners in pan

Mix first 5 ingredients in medium bowl (coconut oil through applesauce)

In a separate bowl, mix baking soda, baking powder, salt, flours, and cinnamon

Add wet ingredients to dry ingredients. Stir until just mixed.

Fold in grated zucchini

Evenly spoon batter into 12 muffin cups

Bake for 18-20 minutes, or until toothpick entered in center of muffin comes out clean.

Notes

If you don't have buckwheat flour, you can use 2 cups of white whole wheat flour instead (or you could sub almond flour).
