In a small bowl, whisk together mayonnaise, apple cider vinegar, salt and honey (omit for whole30). Whisk for 30 seconds, or until smooth.
Place coleslaw mix in a large mixing bowl and add dressing. Mix until coleslaw is evenly coated in dressing. If desired, you can add some pepper or additional salt.
Best if allowed to chill in the fridge for an hour before serving, but it can be served right away.

Notes
Make sure to use whole30/Paleo approved mayo. Primal Kitchen is my favorite. This makes roughly 10- ½ cup servings. Coleslaw will last for 3-5 days in the fridge.
