Whole30 & Paleo Coleslaw

This creamy Paleo and Whole30 coleslaw is crunchy, sweet and tangy. Requires only 6 ingredients and is ready in 5 minutes.

Equipment

Ingredients

  • ½ cup whole30/Paleo approved mayonnaise
  • 1 tbsp. apple cider vinegar
  • ¼ tsp. fine sea salt
  • 1 tbsp. honey (omit for whole30)
  • 5 cups coleslaw mix (roughly an 8-10 oz. bag)

Instructions

  • In a small bowl, whisk together mayonnaise, apple cider vinegar, salt and honey (omit for whole30). Whisk for 30 seconds, or until smooth.
  • Place coleslaw mix in a large mixing bowl and add dressing. Mix until coleslaw is evenly coated in dressing. If desired, you can add some pepper or additional salt.
  • Best if allowed to chill in the fridge for an hour before serving, but it can be served right away.
  • Enjoy!

Notes

Make sure to use whole30/Paleo approved mayo. Primal Kitchen is my favorite. 
This makes roughly 10- ½ cup servings. 
Coleslaw will last for 3-5 days in the fridge.
