Gluten-free Zucchini Bread
This gluten-free zucchini bread is soft and fluffy and perfectly moist.
Made with 2 full cups of zucchini and lightly sweetened with natural sugar.

In a large mixing bowl, combine the gluten-free flour, almond flour, coconut flour, spices, baking soda, and salt.
In a separate mixing bowl, whisk the wet ingredients, coconut sugar, and shredded zucchini.
Create the zucchini bread batter by mixing the wet ingredients in with the dry ingredients.
Place batter in a lined 9x5 loaf pan and bake at 350 degrees F for 55-60 minutes, or until cooked through.
