Wild Rice Salad with Dried Cranberries and Pecans

This cold wild rice salad is made with apples, celery, dried cranberries, and toasted pecans. Everything is tossed in the most delicious orange vinaigrette. 

You will need:  -wild rice -pecans -scallions -celery -dried cranberries -green apple -fresh parsley -orange zest -orange juice -extra-virgin olive oil -apple cider vinegar -pure maple syrup -salt & pepper

Prepare wild rice according to package directions. After wild rice has cooked, place in freezer to allow to cool.

Place pecans in the oven at 350F to toast them. Bake for 6-9 minutes, stirring half way though.

Whisk all dressing ingredients together to make the orange vinaigrette.

Place cooked rice and prepared salad ingredients in a mixing bowl. Add orange vinaigrette and toss to combine.
