Easy  Vegetarian Skillet Lasagna

Easy and delicious skillet lasagna that's ready in 40 minutes!  Recipe as written is vegetarian, but you can easily add some ground beef, turkey, or chicken for some protein! 

INGREDIENTS

- olive oil - garlic - yellow onion - red pepper - zucchini - dried basil - dried oregano - onion powder - fine sea salt - spinach - diced tomatoes - spaghetti sauce - lasagna noodles - shredded mozzarella - fresh mozzarella

STEP 1

Add chopped veggies to skillet. Cook until onions are translucent and then add spices and herbs to veggie mix. 

STEP 2

Add spinach, tomatoes, and spaghetti sauce. Bring to a boil and then break up lasagna noodles and add to skillet. 

STEP 3

Cover skillet and cook on low for 25-30 minutes.  Mix in cheese and top with fresh mozzarella. 

STEP 4

Top with fresh basil before serving if desired. Serve & enjoy!
