Cook quinoa according to package directions.
Add cooked quinoa, salsa, black beans, corn, chili powder, cumin, and garlic powder to a mixing bowl.
Stir until everything is fully mixed together. This is the stuffing for the inside of the peppers.
Slice bell peppers in half lengthwise, remove seeds and membranes, and place face-up in baking dish.
Evenly fill each pepper half with quinoa and bean mixture.
Cover with foil and bake at 350 degrees F for 50 minutes. Serve stuffed bell peppers with your favorite toppings! Enjoy!
