Gather Your Ingredients

-cashews -almonds -strawberries, blueberries, kiwi -pure maple syrup -lemon juice -fine sea salt -canned coconut cream -dates

Start by blending the dates, almonds, and salt in a food processor.

Once the dough is sticky, divide between 6 mini tart pans and press dough into bottoms and edges of pans.

Make the cream filling by adding coconut cream, soaked cashews, lemon, and maple syrup to a food processor and blend until smooth.

Evenly divide cream filling between the 6 prepared tart pans.

Top each tart with fresh fruit. Place in the fridge to allow cream filling to set. Serve chilled.

- coconut cream should be from canned coconut cream that has been chilled overnight -you will need pre-soaked cashews for the filling
