vegan chocolate mousse

Ingredients: - cacao powder - canned coconut cream - pure vanilla extract - pure maple syrup


Chill the can of coconut cream overnight in the fridge. Then scoop the cream from the top of the can into a mixing bowl.


Using a hand-held mixer, beat the coconut cream on medium-high until light and fluffy (about 30 seconds).


Add the cacao, maple syrup, and vanilla. Beat on medium until ingredients are incorporated and the mixture is thick and creamy.


Allow mousse to chill in the fridge for a minimum of 15 minutes and then divide between 2 small dessert bowls.

Top with whipped cream, coconut whipped cream, fresh fruit, and/or chocolate shavings.
