Southwest Quinoa Salad with Avocado


- quinoa -black beans & chickpeas -sweet corn -chopped red pepper -chopped red onion -cilantro -fresh lime juice & zest -avocado oil -honey -garlic powder -ground cumin -salt -avocado

Cook quinoa according to package directions, chop veggies and cilantro, and drain beans. Add everything to a large bowl. 


Prepare the dressing: Add all dressing ingredients to a mason jar, or lidded container. Cover and shake until combined. 


Pour dressing over salad ingredients and mix until fully combined.  


For ultimate flavor, allow salad to sit in the fridge for a minimum of 30 minutes before serving.  Top with fresh avocado before serving.
