Southwest Chicken Chili


-extra-virgin olive oil -jalapeño -red onion -red pepper -celery -leeks -garlic -oregano -chili powder -ground cumin -ground coriander -salt -tapioca starch -chicken bone broth -corn -black and pinto beans -cooked & shredded chicken


In a large stock pot, sauté veggies with olive oil and then add spices, seasonings, and starch.


Mix veggies with seasonings and then add the broth to the pot. Bring to a simmer.


Puree part of the corn with water and then add the pureed corn to the pot with broth and veggies.


Add the shredded chicken, remaining corn, and beans. Mix to combine and simmer for 30 minutes.

Serve and enjoy! This southwest chicken chili is great topped with avocado, cilantro, tortilla chips, cheese, and/or sour cream.
