Southwest Chicken Chili (gluten free + dairy free)
This creamy, flavorful, southwest chicken chili is packed with veggies and protein.
The creaminess comes from pureed corn, so no dairy is needed. Warm, comforting, tasty… everything a chili should be.
-extra-virgin -olive oil -Anaheim pepper -red onion -celery -red pepper -leaks -garlic cloves -dried oregano -chili powder -ground cumin
-ground coriander -salt -arrowroot starch/powder -chicken broth -water -frozen sweet corn -black beans -pinto beans -shredded chicken
Sautee veggies with olive oil and then add spices and starch. Continue cooking, stirring constantly.
Add broth and bring to a simmer.
Puree the corn and then add to the chili.
Add beans, corn, shredded chicken and let simmer for a minimum of 30 minutes.
