Peanut Butter Oatmeal Bars

No bake peanut butter oatmeal bars are made with dates, flaxseeds, old-fashioned oats, and peanut butter. No added sugar, and both gluten free and dairy free friendly.

Step 1: Add dates to food processor and pulse until small pieces remain.

Step 2: Add remaining ingredients to food processor, along with the blended dates.

Step 3: Blend until all ingredients are evenly mixed and a sticky "dough" is left. Scrape sides of food processor as needed.

Step 4: Press mix until a 9x5 loaf pan that's been lined with parchment paper.

Step 5: If desired, top with melted chocolate and shredded coconut. Allow chocolate to set before cutting.

After chocolate has set, remove from pan and cut into desired sized bars.

These healthy peanut butter oatmeal bars should be stored in an air-tight container in the fridge and will stay good for 1 week.
