Oven Baked Fajitas

Ingredients - chicken breasts - sweet bell peppers - yellow onion - extra-virgin olive oil - taco or fajita seasoning -

STEP 1

Place the chicken breasts, sliced peppers, and sliced onions in a large baking dish and sprinkle seasoning on top.

Bake at 400 degrees F for 25-30 minutes, or until the internal temperature of the chicken is 165-degrees F. Mix peppers halfway through baking time.

STEP 2

Remove chicken from dish and shred using two forks. Return to baking dish and mix in with the peppers and onions.

STEP 3

Serve with fajita sides, like black beans, refried beans, rice, guacamole, pico de gallo, and  lime wedges.
