- coconut sugar (or brown sugar)
- butter (or coconut oil)
- pure vanilla extract
- coconut flour
- rolled oats
- baking soda
- semi-sweet chocolate chips
On medium-speed, beat together the butter (or coconut oil) and sugar until smooth, about one minute.
Add the vanilla and eggs and beat on medium speed for an additional 30 seconds.
Add the coconut flour, oats, baking soda, and salt. Beat on low until all ingredients are combined.
Fold the chocolate chips into the cookie dough.
Use about 2 tbsp. of dough to create cookies. Scoop onto a prepared baking sheet and flatten into round cookie shapes.
Bake at 350 degrees F for 7-9 minutes, or until cookies are light golden brown on the edges. Let cool slightly.
