Oatmeal Cookies with Coconut Flour

YOU WILL NEED

- coconut sugar (or brown sugar) - butter (or coconut oil) - eggs - pure vanilla extract - coconut flour - rolled oats/old-fashioned oats - baking soda - salt  - semi-sweet chocolate chips

Beat the butter (or coconut oil) and sugar together in a medium sized mixing bowl until smooth.

Add the eggs and vanilla to the butter/sugar mix and beat for an additional 30 seconds. 

Add the coconut flour, oats, baking soda, and salt. Beat on low until all ingredients are combined.

Fold the chocolate chips in with the dough.

Scoop the dough onto parchment lined cookie sheet. Flatten cookies into round cookie shapes.

Bake at 350 degrees F for 7-9 minutes, or until cookies are set and golden brown on the edges. Let cool slightly.
