Oatmeal Coconut Flour Cookies

INGREDIENTS

- coconut sugar (or brown sugar) - butter (or coconut oil) - eggs - pure vanilla extract - coconut flour - rolled oats/old-fashioned oats - baking soda - salt  - semi-sweet chocolate chips

Beat the butter (or coconut oil) and sugar together in a medium sized mixing bowl until smooth.

Add the eggs and vanilla to the butter/sugar mix and beat for an additional 30 seconds. 

Add the dry ingredients (oats, coconut flour, baking soda, salt). Mix on low until fully combined.

Add the chocolate chips and fold into the dough.

Using 2 tbsp. of dough, roll into balls and place on a parchment paper lined baking sheet. Flatten dough balls into round cookie shapes.

Bake at 350-degrees F for 7-9 minutes. Allow to cool slightly and then remove from cookie sheet.

These are best fresh from the oven/the day they are made.  Leftovers can be stored in an airtight container for up to 3 days.
