Oat Flour Cookies with Chocolate Chips


INGREDIENTS - oat flour - unsalted butter - coconut sugar - egg - baking soda - salt - vanilla extract - chocolate chips

Step 1: In a large bowl, cream together butter and sugar. Next add egg and vanilla and beat on low speed until combined.

Step 2: To the same bowl, add the oat flour, baking soda, and salt. Mix on low until flour is just combined.

Step 3: Fold in the chocolate chips.

Step 4: Scoop dough into 2 tbsp. sized balls and place on a baking sheet. Bake at 375-degrees F for 7-8 minutes.

Cookies are done with edges are browned. Remove from oven and allow to cool before removing from baking sheet. 

TIPS: - don't pack oat flour when measuring - use a spring-loaded cookie scoop - for crispy cookies, bake 1-2 additional minutes
