Oat Flour Cookies with Chocolate Chips
- oat flour
- unsalted butter
- coconut sugar
- baking soda
- vanilla extract
- chocolate chips
In a large bowl, cream together butter and sugar. Next add egg and vanilla and beat on low speed until combined.
To the same bowl, add the oat flour, baking soda, and salt. Mix on low until flour is just combined.
Fold in the chocolate chips.
Scoop dough into 2 tbsp. sized balls and place on a baking sheet. Bake at 375-degrees F for 7-8 minutes.
Cookies are done with edges are browned. Remove from oven and allow to cool before removing from baking sheet.
- don't pack oat flour when measuring
- use a spring-loaded cookie scoop
- for crispy cookies, bake 1-2 additional minutes
