Oat & Honey Granola

to make and is perfect for breakfast or as a snack.
All you need is 10 minutes to get this prepped and in the oven.
- rolled oats (gluten free if needed)
- sliced almonds
- shredded coconut
- fine sea salt
- pure vanilla extract
- coconut oil
- dried apricots
Combine oats, almonds, coconut, cinnamon, and salt in a large mixing bowl.
In a separate bowl, combine vanilla, oil, and honey. Add this to the bowl with the oat mixture.
Mix ingredients together until all oats are coated and wet ingredients are fully incorporated.
Spread granola out on a rimmed baking sheet and bake at 250 F for 60 minutes, stirring every 20 minutes.
Allow to cool at room temperature and then mix in the dried chopped apricots (or other dried fruit).
