Easy No Bake Peanut Butter Oat Bars

These peanut butter no bake bars make a healthy and delicious snack, and what's not to love about peanut butter and chocolate!? Made with dates, oats, and peanut butter. Easy to make and prepped in 15 minutes.

-medjool dates -peanut butter -rolled oats (certified gluten free if needed) -flaxseed meal -unsweetened shredded coconut -fine sea salt -chocolate chips -coconut oil 

INGREDIENTS

STEP 1

Add dates to a food processor and blend on high until dates break down and are in tiny pieces. 

STEP 2

Next, add peanut butter, oats, flaxseed meal, coconut, and sea salt (omit salt if your PB has salt). 

STEP 3

Pulse on high until ingredients are evenly mixed. You may need to scrape down the sides of the food processor to blend everything. 

STEP 4

Pour peanut butter and oat mixture into a 9x5 loaf pan that's been lined with parchment paper and press down evenly into pan.

STEP 5

Melt chocolate chips and coconut oil in a microwave safe bowl and spread on top of bars. Sprinkle with additional coconut.   

Place bars in the refrigerator for 30 minutes so the chocolate can set. Remove from the pan and cut into desired shaped bars.
