This kale and butternut squash salad screams all things fall with the apples, crunchy pumpkin seeds, creamy goat cheese, and the most delicious maple vinaigrette.  Nutrient packed and a flavorful salad that everyone will love.

Step 1

Peel and cut butternut squash into 1/2" cubes.

Step 2

Roast butternut squash cubes at 425 degrees F.

Step 3

While the squash is in the oven, roast your pumpkin seeds.

Step 4

Add all dressing ingredients to a mason jar. Cover and shake.

Step 5

Place kale leaves in large bowl add olive oil. Next massage olive oil into kale leaves.

Step 6

Assemble the kale and butternut squash salad and drizzle dressing on top.
