Healthy Fried Rice (soy-free option)

Better thank take-out heathy fried rice! Made with chicken, brown rice and loaded with veggies.  You can easily swap the chicken for shrimp if desired, plus there is an option to use coconut aminos for a soy-free option.  .

INGREDIENTS

- extra virgin olive oil - chicken - yellow onion - red bell pepper - broccoli - garlic - frozen peas/corn - eggs - cooked brown rice - green onions - coconut aminos (or soy sauce) - toasted sesame oil

Add chicken to a large skillet and cook. Once all pieces are fully cooked remove chicken from skillet and set aside.

Next, sautee peppers, onion, and broccoli. Once cooked, add garlic and frozen peas/carrots. 

STEP 3

Push cooked veggies off to one side of the skillet. Add eggs and scramble until fully cooked. Then mix eggs and veggies together. 

STEP 4

Add cooked rice, cooked chicken, coconut aminos, toasted sesame oil, and green onions to skillet. Stir and continue cooking 3-5 minutes.  

A simple and fresh meal that is ready in less than 30 minutes. Skip the take-out and give this healthy fried rice a try instead!
