Healthy Breakfast Oatmeal  Cookies

Nutrient-dense breakfast oatmeal cookies! Made with wholesome ingredients and naturally sweetened with banana.  Easy to make and great for breakfast or as a snack.

- rolled oats (gluten free if needed) - almond flour - flaxseed meal - ripe bananas - coconut oil - eggs - pure vanilla extract - chocolate chips (optional)

INGREDIENTS

Add the dry ingredients (oats, almond flour, and flaxseed meal) in a large bowl and mix until combined.

Push the dry ingredients off to one side and add mashed banana, melted coconut oil, eggs, and vanilla to the other side.  

STEP 3

Whisk the eggs in with the banana and then fully mix all ingredients together to create the "dough."

STEP 4

Fold in the chocolate chips (you can also add walnuts, almonds, pecans, or shredded coconut).

STEP 5

Scoop dough into 2" mounds and bake at 350 degrees F for 18-20 minutes. Allow to cool and enjoy!
