Easy to make and great for breakfast or as a snack.
- rolled oats (gluten free if needed) - almond flour - flaxseed meal - ripe bananas - coconut oil - eggs - pure vanilla extract - chocolate chips (optional)
Add the dry ingredients (oats, almond flour, and flaxseed meal) in a large bowl and mix until combined.
Push the dry ingredients off to one side and add mashed banana, melted coconut oil, eggs, and vanilla to the other side.
Whisk the eggs in with the banana and then fully mix all ingredients together to create the "dough."
Fold in the chocolate chips (you can also add walnuts, almonds, pecans, or shredded coconut).
Scoop dough into 2" mounds and bake at 350 degrees F for 18-20 minutes. Allow to cool and enjoy!
