Great for breakfast or as a snack.
- rolled oats (gluten free if needed)
- almond flour
- flaxseed meal
- ripe bananas
- coconut oil
- pure vanilla extract
- chocolate chips (optional)
Combine the dry ingredients (oats, almond flour, and flaxseed meal) in a large bowl.
In the same bowl, add mashed banana, melted coconut oil, eggs, and vanilla.
Whisk the eggs in with the banana and then fully mix all ingredients together to create the "dough".
Fold in the chocolate chips (you can also add walnuts, almonds, or pecans).
Bake at 350 degrees F for 18-20 minutes.
Allow to cool and enjoy!
