Healthy Breakfast Cookies

Easy nutrient-dense breakfast cookies! Made with wholesome ingredients and naturally sweetened with banana.  Great for breakfast or as a snack.

- rolled oats (gluten free if needed) - almond flour - flaxseed meal - ripe bananas - coconut oil - eggs - pure vanilla extract - chocolate chips (optional)

INGREDIENTS

Combine the dry ingredients (oats, almond flour, and flaxseed meal) in a large bowl.

In the same bowl, add mashed banana, melted coconut oil, eggs, and vanilla. 

STEP 3

Whisk the eggs in with the banana and then fully mix all ingredients together to create the "dough".

STEP 4

Fold in the chocolate chips (you can also add walnuts, almonds, or pecans). 

STEP 5

Bake at 350 degrees F for 18-20 minutes.  Allow to cool and enjoy!
