Better-for-You Scotcheroo Bars 

These Scoterchoos (also known as Special K bars) are made without corn syrup and are naturally sweetened. Still delicious, but better ingredients!

GLUTEN-FREE BROWN RICE CRISPS CEREAL

NATURAL PEANUT BUTTER

SEA SALT

SEMI-SWEET CHOCOLATE CHIPS

step 1

Add honey and coconut sugar to a small saucepan and cook over medium heat until sugar is dissolved.

step 2

Add peanut butter and salt to sauce pan and mix in with honey/sugar mixture. Mixture will be fairly thick.

step 3

Place brown rice crisps in large mixing bowl and add peanut butter mixture to brown rice crisps.

step 4

Fully mix peanut butter  mixture and brown rice crisps.

step 5

Press rice crisps mixture into bottom of and 8x8 pan. Melt chocolate and spread on top of bars.

step 6

Allow chocolate to fully set and then cut into bars.
