Southwest Chicken Chili (gluten free + dairy free)

This creamy, flavorful, southwest chicken chili is loaded with veggies and protein.  Warm, comforting, and tasty. And made with all gluten free and dairy free ingredients.

INGREDIENTS

-extra-virgin -olive oil -Anaheim pepper -red onion -celery -red pepper -leaks -garlic cloves -dried oregano -chili powder -ground cumin

-ground coriander -salt -arrowroot starch/powder -chicken broth -water -frozen sweet corn -black beans -pinto beans -shredded chicken

STEP 1

Sautee veggies with olive oil and then add spices and starch. Continue cooking, stirring constantly. 

STEP 2

Add broth and bring cooked vegetables and bring to a simmer.

STEP 3

Puree the corn and then add to the chili.

STEP 4

Add beans, corn, shredded chicken. Simmer for a minimum of 30 minutes. 

STEP 5

Now enjoy this healthy, clean eating southwest chicken chili. 

Top with cilantro, fresh lime, onions, avocado, sour cream, and/or cheese (if not dairy free).
