Easy & Delicious Dairy-free Frittata

This dairy-free frittata is packed with veggies and makes an easy & healthy breakfast or dinner. Lots of ways to customize, including an option for adding in you meat of choice.

INGREDIENTS

- eggs - spinach - garlic - onions - bell peppers - broccoli - dairy-free milk - salt & pepper

STEP 1

Sautee veggies with a little bit of olive oil in a large oven safe skillet (I like cast iron).

STEP 2

While veggies are cooking, whisk together the eggs, dairy-free milk, salt, and pepper. 

STEP 3

Add egg mixture to skillet and mix in with veggies. Allow to cook on stove until edges are set.

STEP 4

Bake at 400 degrees F for 13-15 minutes, or until center is set.
