Delicious Dairy-free Frittata

This dairy-free frittata is packed with veggies and makes an easy & healthy breakfast or dinner. Grab whatever veggies you have on hand and get this frittata in the oven.

INGREDIENTS

- eggs - spinach - garlic - onions - bell peppers - broccoli - dairy-free milk - salt & pepper

STEP 1

Sautee veggies with a little bit of olive oil in cast iron skillet (or other oven safe skillet). 

STEP 2

While veggies are cooking, add the eggs, dairy-free milk, salt & pepper to a medium bowl and whisk until fully mixed. 

STEP 3

Add egg mixture to skillet and mix in with veggies. Allow to cook on stove until edges are set.

STEP 4

Bake at 400 degrees F for 13-15 minutes.
