This dairy-free frittata is packed with veggies and makes an easy & healthy breakfast or dinner.
Grab whatever veggies you have on hand and get this frittata in the oven.
- bell peppers
- dairy-free milk
- salt & pepper
Sautee veggies with a little bit of olive oil in cast iron skillet (or other oven safe skillet).
While veggies are cooking, add the eggs, dairy-free milk, salt & pepper to a medium bowl and whisk until fully mixed.
Add egg mixture to skillet and mix in with veggies. Allow to cook on stove until edges are set.
Bake at 400 degrees F for 13-15 minutes.
