Cold Wild Rice Salad

Gather Your Ingredients
-wild rice -pecans -scallions -celery -dried cranberries -green apple -parsley -orange zest and juice -extra-virgin olive oil -apple cider vinegar -pure maple syrup -salt & pepper
Cook wild rice according to package directions. Once cooked, place in freezer to allow to cool while you prepare the rest of the salad.
Roast pecans in oven at 350-degrees F. Bake for 6-9 minutes or until toasted and fragrant.
Add all of the orange dressing ingredients to a small bowl and whisk until well combined.
Add cooked and cooled wild rice and all salad ingredients to a large bowl. Pour dressing over salad and thoroughly mix everything together.
This cold wild rice salad can be served right away or stored in the fridge for later!
