chocolate mousse with coconut cream

Ingredients: - cacao powder - canned coconut cream - pure vanilla extract - pure maple syrup


Chill the can of coconut cream overnight in the fridge. Then scoop the cream from the top of the can into a mixing bowl.


Using a hand-held mixer, beat the coconut cream on medium-high until fluffy and light peaks form. This should take about 30 seconds.


Add the cacao, maple syrup, and vanilla. Beat on medium-speed until thick and creamy.


Divide between two small dessert bowls and then allow to chill in the fridge for a minimum of 15 minutes before serving.

Top with whipped  coconut cream, raspberries, strawberries, or chocolate chips.
