One-pan Chicken Fajita Bake

This one-dish chicken fajita bake is bursting with southwest flavor and makes an easy weeknight meal Perfect for chicken fajita salads, burrito bowls, or classic fajitas.

INGREDIENTS

SIMPLE  HEALTY INGREDIENTS

- chicken breasts - sliced onions - sliced bell peppers - taco/fajita seasoning - tapioca starch (or corn starch)

STEP 1

Place sliced bell peppers and onions in a 9x13 baking dish. Add chicken and sprinkle with olive oil and seasoning. 

Bake at 400 degrees F for 25-30 minutes, or until chicken is cooked. Stir peppers and onions half way through.

STEP 3

Remove chicken from baking dish and shred with two forks. Return shredded chicken to baking dish and mix in with peppers and onions. 

While the chicken and veggies are cooking, prepare your favorite toppings, like rice, guacamole, pico, black beans, and/or cheese!
