Chicken Cauliflower Soup
-chicken breasts -cauliflower -leeks -yellow onion -carrots -extra-virgin olive oil -dried thyme -salt -pepper -garlic -chicken bone broth
In a large stock pot, sauté veggies over medium-heat and then add the spices/seasonings.
Add chicken breasts, cauliflower florets, and bay leaves to the pot with the veggies.
Pour in bone broth and ensure chicken and cauliflower are fully submerged. Cover and simmer until chicken is cooked.
Once chicken is fully cooked (165-degrees F), remove from pot and shred.
Before adding chicken back to pot, use an immersion blender to puree some of the soup. Next, add the chicken back to the pot.
