Healthy Cashew Chicken Salad

cooked & shredded chicken
Greek yogurt (dairy free or regular)
apple cider vinegar
salt & pepper
Add the salad ingredients (shredded chicken, diced apples, chopped celery, cashes) to a large mixing bowl.
In a separate bowl, whisk together all of the dressing ingredients.
Pour salad dressing over chicken, apples, celery, and cashews.
Mix until thoroughly combined. Can be eaten immediately, but it's even better if allowed to chill in the fridge for a few hours.
* You can use dairy-free yogurt or regular yogurt.
* Honey is optional - omit to keep sugar free
* You can use shredded chicken, diced chicken, or rotisserie chicken.
