Healthy Cashew Chicken Salad

 This cashew chicken salad with apples is a  healthy twist on the classic. Made with wholesome ingredients  all tossed in a better-for-you creamy dressing.

INGREDIENTS

cooked & shredded chicken apple celery raw cashews mayonnaise Greek yogurt (dairy free or regular) lemon juice apple cider vinegar honey ground mustard salt & pepper

STEP 1

Add the salad ingredients (shredded chicken, diced apples, chopped celery, cashes) to a large mixing bowl. 

STEP 2

In a separate bowl, whisk together all of the dressing ingredients. 

STEP 3

Pour salad dressing over chicken, apples, celery, and cashews. 

Mix until thoroughly combined. Can be eaten immediately, but it's even better if allowed to chill in the fridge for a few hours. 

STEP 4

Tips: * You can use dairy-free yogurt or regular yogurt. * Honey is optional - omit to keep sugar free * You can use shredded chicken, diced chicken, or rotisserie chicken.
