Cashew Chicken Salad with Apples

(dairy-free option)


cooked & shredded chicken apple celery raw cashews mayonnaise Greek yogurt (dairy free or regular) lemon juice apple cider vinegar honey ground mustard salt & pepper


Add the shredded chicken, diced apples, chopped celery, and cashews to a large mixing bowl. 


In a separate bowl, make the dressing using the mayo, Greek yogurt, lemon juice, apple cider vinegar, honey, mustard, salt, and pepper.


Pour salad dressing over chicken, apples, celery, and cashews.

Mix dressing in with the chicken, apples, cashews, and celery.


This healthy cashew chicken salad can be eaten immediately, but it's even better if allowed to chill in the fridge for a few hours.

Optional add-ins: - sliced red or green grapes - sliced green onions - fresh herbs -bacon
