Carrot Cake Energy Balls

YOU WILL NEED

-grated carrots -pitted dates -walnuts -cashews -almond flour -shredded coconut -ground cinnamon -ground nutmeg -vanilla extract -coconut butter -pure maple syrup -milk

STEP 1

Blend dates, walnuts, and cashews in a food processor until nuts are finely ground down. 

STEP 2

To the food processor, add shredded carrots, almond flour, coconut, cinnamon, nutmeg, and vanilla. Blend until well mixed. 

STEP 3

Roll carrot cake mix into evenly shaped balls. You will get about 12 balls out of the mix. 

STEP 4

Optional step is to add the glaze. If not adding the glaze, you can roll the balls in shredded coconut.
