The Best Gluten-free Zucchini Bread
A delicious, soft & fluffy gluten-free zucchini bread recipe, that's actually healthy!
Made with 2 full cups of zucchini and lightly sweetened with natural sugar.

Combine gluten-free flour, almond flour, coconut flour, spices, baking soda, and salt in a large mixing bowl.
In a separate mixing bowl, add the wet ingredients, coconut sugar, and shredded zucchini, and whisk together.
Add the wet ingredients to the bowl with the dry ingredients and mix until fully combined. Batter will be thick.
Place batter in a lined 9x5 loaf pan and bake at 350 degrees for 55-60 minutes, or until cooked through.
Allow bread to cool. Then slice and enjoy this delicious gluten-free zucchini bread.
Great for breakfast, brunch, or as a snack.
