Gluten-free Zucchini Bread

Ingredients -gluten-free flour  -almond flour -coconut flour -cinnamon -nutmeg -baking powder -baking soda -salt -mashed banana -coconut oil -coconut sugar -eggs -vanilla extract -grated zucchini

STEP 1

In a large mixing bowl, combine with flours, cinnamon, nutmeg, baking soda, baking powder, and salt.

In a separate bowl, mix the banana, coconut oil, coconut sugar, eggs, vanilla, and zucchini.

STEP 2

Add the wet ingredients to the flour mixture and stir until everything is fully combined. Feel free to add some chocolate chips if you'd like :)

STEP 3

Scoop and spread batter into a loaf pan that has been lined with parchment paper. Bake at 350 for 55-65 minutes.

STEP 4

Let bread cool slightly before removing from pan and slicing. You will get 10-12 slices of bread, depending on how thick you slice it.
