Pumpkin Flax Bread

Do you like pumpkin bread? If yes, then you’ve got to give this recipe a try! This better-for-you pumpkin bread has an extra healthy twist with the added benefit of flaxseeds. Not to mention all the benefits from pumpkin, like potassium and beta-carotene (a powerful antioxidant).

This bread is made with whole wheat flour (we use whole wheat white flour), so off the bat you are getting all the vitamins and minerals whole wheat offers. In addition, I’ve swapped some of the flour for ground flaxseed. In each serving of bread (12 servings in this recipe) you are getting an entire tablespoon of flaxseeds! None of this “sprinkle of flax” you may see with packaged items advertising it’s made with flaxseed. One of my biggest pet peeves is when a product advertises “made with flax”, but flaxseeds is half way down the ingredient list and there is more sugar than flaxseed in the product. Not these muffins!  This bread delivers on the nutritional benefits of flax. Flaxseeds are a good source of omega-3’s and contain high amounts of minerals that we are typically lacking in our diet. So, get these ingredients ready and make yourself a loaf of this healthy and delicious pumpkin flax bread!

Like other baked good, we eat some right away and freeze the rest! We eat this bread for breakfast, add to lunches, or have as a snack.

Pumpkin Flax Bread

Serves: 12 Cooking Time: 1 hour


  • 1 3/4 cup whole wheat flour (I use white whole wheat flour)
  • 3/4 cup flaxseed meal
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1 tsp. vanilla
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil, melted
  • 2 eggs, lightly beaten
  • 1 can pumpkin (not pumpkin pie mix)



Preheat oven to 350.


Grease 9x5 loaf pan and set aside.


In large bowl, combine the flour, flaxseed, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.


In separate bowl, combine the remaining wet ingredients.


Add the wet ingredients to the dry ingredients and mix just until combined.


Poor batter into greased loaf pan and smooth batter until evenly spread in pan.


Bake for 40 minutes or until toothpick entered into middle of bread comes out clean.


Let cool before removing from pan.
